The most enjoyable way to spend your winter holidays is with your loved ones, and the easiest way to gather everyone is around the table. At Romanians, traditional food is preferred by Christmas, so I thought I’d share my delicious cabbage rolls recipe.
- 2 kg minced pork, I used pork loin;
- 400 g onion;
- 150 g of rice;
- 200 ml thicker tomato juice or 2-3 tablespoons broth paste;
- Dry thyme;
- Ground pepper;
- Sweet paprika;
- Pepper berries;
- Bay leaves;
- A large cabbage pickled with thin sheets, or two smaller;
- Smoking for taste, I used naturally smoked rats and bacon.
Method of preparation:
Chop the onion then place in a pan 2-3 tablespoons oil and soften the onion you just chopped, until it becomes translucent. Don’t forget to add a little salt. When the onion becomes translucent add the rice and leave on the heat for a few minutes. Add sweet paprika, and mix until blended. Then put 100 ml of water. After the water has dropped, turn off the stove and leave to cool. During this time you can prepare the cabbage leaves. Remove core, and divide the sheet into 2 or 3 parts depending on the size of the cabbage sheet. If the cabbage is very sour and salty, leave it in cold water. Chop the middle of the cabbage.
Over the minced meat put the onion and the rice that you earlier cooked and which have cooled. Add thyme, ground pepper, a little salt. Do not overdo it with salt, because the meat still draws salt from the cabbage during boiling. Mix well by hand until all ingredients are incorporated.
Now is the time to pack cabbage rolls:
- Take a cabbage leaf and place it on the chopping board. On one edge of the leaf put a spoonful of meat and fold the cabbage rolls taking care at the ends. It’s not difficult, you just have to be patient.
- If you find perforated leaves you can patch them with another piece of cabbage leaf. Then add the meat and fold it.
When you finish packing cabbage rolls, put on the bottom of the pot, dried dill sticks, which will give a special taste. Cover dill sticks with cabbage leaves, and add a layer of chopped cabbage. Place the first layer of cabbage rolls. After you have formed the first row of cabbage rolls put a few smoked, 2-3 tablespoons of tomato juice, a few peppercorns, and a bay leaf, then continue with the second layer and repeat the procedure until you finish all the cabbage rolls .
Cover the last layer of cabbage rolls with chopped cabbage and add a few tablespoons of tomato juice, peppercorns and bay leaf. Then fill the pot with water until the cabbage rolls have covered. Put the pot on the stove over moderate heat and cover the cabbage rolls with a turntable to keep them squeezed. Leave the pot on the stove for one hour, then bake for another two hours. Cabbage rolls will be cooked well and nicely browned, ready to serve with warm polenta and a little sour cream.
