Ingredients for dough:
- 1 kg of flour for marble cake;
- 50 g fresh yeast;
- 300 g sugar;
- 250 g butter;
- 8 yellows;
- 500 ml milk;
- 1 teaspoon salt;
- Peeled lemon and orange peel;
- Vanilla sugar and rum essence;
Ingredients for cream:
- 400 g ground ground walnut;
- 4 tablespoons cocoa;
- 8 egg whites;
- 150 g sugar.
- Essence of rum;
- Turkish delight cubes.
Separately, we will need 1-2 egg yolks for greasy marble cake.
Method of preparation:
For starters we will prepare sourdough. For this you will have to put the yeast in a bowl and finely chop it with a fork. Over yeast put a tablespoon of sugar and mix. Then add 5 tablespoons warm milk and two tablespoons flour. Mix all the ingredients well and allow the sourdough to increase until the volume doubles.
Heat the milk so that it does not burn in your hand. To the warm milk add sugar, lemon and orange peel, 3 pouches of vanilla sugar and half a glass of rum (about 20 ml). Mix until the sugar has melted.
Then melt the butter, and mix the yolks with a teaspoon of salt. The salt will intensify both the color of the yellows and the sweet taste of the marble cake.
When sourdough has grown you can start kneading the dough. Over the sifted flour put sourdough, warm milk prepared beforehand and mix until the ingredients are incorporated. Add the yolks gradually, then the butter, little by little, until it is finished.
Kneading time: about 15-20 minutes.
It should be noted that the dough comes out a little softer on this recipe, so don’t be scared if it doesn’t have the usual consistency. Cover the dough with a foil, and leave it to stand for an hour or two, until it doubles in volume.
Wrap the shapes of marble cake with baking paper. Out of this recipe come two larger or 3 smaller marble cakes, depending on the size of the shapes.
While the dough is seasoned, you can prepare the cream for the filling. Beat the egg whites. After the foam has hardened, gradually add the sugar. With a spatula carefully incorporate the cocoa into the egg white foam. Then add the ground nut. It also adds the essence of rum for a pleasant aroma.
When the dough has grown, divide it into 2 equal parts.
Grease the hands and the worktop generously with oil, so that the dough does not stick. Take some of the dough and spread it on the worktop. Put half the cream and spread it all over the surface. Then sprinkle cubes of Turkish delight over the cream. In this recipe the dough is a little softer, and although it is harder to handle, I guarantee that in the end, the marble cake will be softer, and much tastier. Carefully roll marble cake and place it in the baking sheet. Allow it to grow for 30 minutes, then grease it with egg yolk, and sprinkle sugar over the entire surface. I like to put a few walnut halves for decoration.
Preheat oven to 160 ℃ then bake in oven for 40-50 minutes. To make sure it is well baked inside, you can sample it with a toothpick, or a wooden frying pan.
Marble cake looks delicious and is very fluffy. The only flaw is that it will end too soon!
